Plantain Soft Taco Tortillas

Banana plantains (www.micfood.com)
Makes 12 tortillas
2 c. masa harina (yellow or white)
1 c. Big Banana plantain puree
1 c. water
¼ t. kosher salt
Combine all ingredients and place into mixer with paddle attachment. Mix until dough is formed. Mix for 2 minutes. Remove and let rest for 20 minutes. Separate into 12 golf ball-sized balls. Place each ball in between plastic wrap, then place in a tortilla press; press down until flat. Heat griddle on high heat. Place tortilla on griddle and cook for 30 to 45 seconds on each side. Remove; set aside. When ready to serve, place back on griddle and warm again, or place in tortilla mold and fry until crispy and golden brown.
